Bam! Down 2 pounds.
In a quest to stay out of the boredom rut in the kitchen I’m always searching for new meal ideas. Preferably they be quick and able to be amended for a single person…so I’m not eating the same thing for days on end…see the rut mentioned above.
Enter the quinoa burger I spotted on Eating Well Living Thin.
I made some quick and easy amendments with the things I had on hand:
- 1/2 c cooked quinoa
- 1/2 oz part skim mozzarella
- 1 T Parmesan
- 2 T Panko
- 1 egg white
- 2 T (really just a heaping spoonful) fire roasted tomatoes
- Dash of onion powder
- 1/2 t minced garlic
- Dash sea salt
- Dash pepper
Mix it all up and fry it in a heated pan with about 2t of EVOO. This made a huge and delicious ”patty”.
